The Executive Chef at The Club at Ibis

Chef Jerome Nicholas is the Executive Chet at The Club at Ibis, a private country club in West Palm Beach. He is responsible for managing all culinary operations for four distinct member dining outlets, banquets, catering, and an employee cafeteria which serves over 350 employee meals daily. He supervises 10 subordinate managers, who oversee a staff of over 90 employees. He also must satisfy the discerning palates of 1600 club members, a daunting task!

Chef Jerome has been at Ibis for 8 years, having worked previously at BallenIsles for 6 years, as well as the Brazilian Court Hotel, and the Colony Hotel in Palm Beach. He worked in 9 other significant restaurants or hotels from 1985-1992.

His apprenticeship education was at the Chavant Restaurant (Two Michelin Star), in Grenoble, France. He received a Diploma CAP, finishing 4th in State. He then entered the French Army in 1985, working in the Officer’s Restaurant.

He has many notable accomplishments, including Top 100 Best Chefs in America by the International Restaurant & Hospitality Association, 2000, as well as his Membership in the Chaine des Rotisseurs, 2000-present, and  is a member of DIRONA, 2000-present.

The success of any private country club is not dependent on one person, but the complete staff, from the General Manager to the dining staff, including the workers behind the immediate eyes of the public. On a personal note, Chef Jerome was so compassionate when my husband became ill. We spoke to the Chef regarding my husband’s dietary restrictions, and he was most gracious in providing special soups with no spices. This service went on for months. All we had to do was call and order what was needed.

When I spoke to Chef Jerome today (11/18/16), and again thanked him profusely for his help, he said “It is my duty to help. There are people that are on restricted diets or allergic to various foods. If someone breaks an arm, their food must be cut up into small pieces”. The motto of the Club, which is embroidered on their uniforms is WIT, Whatever It Takes. Chef Jerome embodies that compassionate spirit at The Club at Ibis.
